Eat More Fruits & Vegetables

As many of you know, for the past few years I've been trying to eat healthier and exercise regularly. I've not been as consistent as I would have liked, however Robbie and I have started planning our meals and working together on these goals the past several weeks. One thing we are focusing on is eating more fruits and vegetables. I didn't grow up eating a lot of fresh vegetables, but each year I acquire a taste for more and more of these nutritious foods.

One problem that I have is that I'm not particularly fond of "weeds" - that's my word for lettuce and other leafy greens. I think this aversion stems from the fact that most restaurants use primarily iceberg lettuce. However, over the past few years I've experimented and found that there are many tasty greens on the market, and luckily our local grocery stores carry a variety to choose from.

I like to top my "weeds" with tomatoes, one of my favorite veggies.
Happy colored peppers are another favorite that I enjoy. Not only are they yummy, they can also add lots of color to a dish.
As part of this healthy eating initiative, I recently tried a new recipe for shrimp fried rice that was chock full of healthy vegetables - snow peas, carrots, peppers, onions.
The avocado is often confused for a vegetable because it's used in salads, however it's technically a fruit.
Robbie recently tried a new breakfast recipe that included this delicious fruit - baked avocado & egg. He added diced tomatoes on top, a slice of toast and a small scoop of guacamole to complete the meal - totally yummy!
We both enjoy fresh fruits and are adding more of those to our diets as we eliminate more and more sweets.
BTW- These produce photos were taken during my recent inspiration outing - love that we can find inspiration anywhere, even a local grocery store! For lunch that day, I  had an avocado and chicken salad topped with tomatoes and mozzarella cheese (no weeds in sight!).

  1. I have to say, no I don't eat enough fruits and veggies. They all look so yummy but when I get them home, I just don't want them. Sigh.

  5. I love fresh fruits and vegetables---especially this time of year. I love salads with just about anything on them. I just don't like to make them and I don't really know why. It's not like they're hard to make. I'm sure it's just a mental thing, but it seems like everyone else's salad tastes better than my own! I love your colorful pictures too!

  6. Lovely photos - I love 'weeds'! Love lettuce, cabbage and spinach. Have a full salad for lunch every day and love all fruits except bananas and avocados!

  7. I love a good salad, but I know we don't eat enough fruit and veggies. We started juicing this past week to see if that will help us increase the veggie intake and so far even my picky eater is enjoying his green juice. Good luck with the changes to your eating!

  8. I'm trying hard to eat more of the good stuff. I like iceberg and romaine, but have a hard time with a lot of the more pungent and bitter weeds. "Spring Mix" to be has to be drowned in dressing to cover the weed taste... sort of defeats the purpose, eh?

  9. We've been eating lots of salads lately, driven by my daughter wanting to eat healthier and lose a few pounds. I'd love the recipe for baked avocado and eggs.

  10. Do like fresh fruit and veg, even if I put weeds in my salads.
    Considering I'm reading this finishing my smoothie - apples, peaches, banana, frozen strawberries, mixed berries (raspberries, blueberries,blackberry), freshly squeezed orange, plus veggies - carrot and spinach... um yes I get my fruit and veg in ;)

  11. I love all fruit and most veg ... but I don't know how to cook some of the more exotic things that are available these days. These photos are mouth-wateringly colourful!

  12. More than half my grocery cart is filled with fruits and vegetables. We started changing our diet nearly three years ago, and each year we add more variety to our menus. It's paid off in good health and weight loss for both of us.
