I found a recipe for an 8-Layer Taco Salad in the August edition of Eating Well magazine. I was excited when my completed salad looked just as good as the magazine photo.
And it was delicious! We covered the glass dish with Saran Wrap and it stayed fresh in the refrigerator for several days. (I did not put the avocado/yogurt mixture layer in the bowl because I knew it would not keep as well. We added it to our salads on our plates.) I decided this was definitely a "keeper" recipe and made a 6x6 card for my Main Dishes Recipe Book.
I also tried a new meatloaf recipe from a recent edition of Real Simple magazine. We both enjoy meatloaf and have made quite a few variations over the years, but I was intrigued that this recipe included ground beef and ground pork as well as old-fashioned rolled oats. The addition of roasted tomatoes was a bonus, especially since tomatoes are my favorite vegetable. I'll definitely be making this recipe again, so (of course) it had to be scrapped, too!
I think I need to follow your example and try some new recipes....it's so easy to get into a rut.
ReplyDeleteThat taco salad looks great! We've been trying new recipes, otherwise it is just too easy to get into a rut. My problem has been being so tired toast or cereal seems the most I want to cook!
ReplyDeleteI'm finally back in the kitchen. revamping some old recipes to make them gluten free.... last night was turkey stuffing roll ups with broccoli and cheese sauce. It was good!

ReplyDeleteI get in a cooking rut too. Especially since it's mostly just the two of us. When the family is here, they just want their favorites. When I do try something new, I usually share it on my blog if it's a keeper!
ReplyDeleteBoth sound good. I try new recipes nearly every week. I have an app on my phone and iPad and collect ones that look good when I see them on the web. We've found some real keepers, and not many that we wouldn't eat again. I'm making a new white chicken chili recipe this weekend.
ReplyDeleteThose look yummy! Now that the weather has turned cold, I am more in the mood to cook. I purchased a new roasting pan at a friends open house a week ago, and tonight I made roast pork with veggies using a new recipe. It was really good, and healthy too.

Hmmmm....I don't think I've made anything new in awhile. But that salad looks fabulous! Totally need to try that. And you've inspired me to go on the hunt for a few new recipes myself. :)
